    00 Chef's Flour, milled by Antimo Caputo. This is the 00 flour you will find on shelves in stores in Napoli.  Cuoco is Chef or Cook in Italian.
    The Caputo family has been producing flour in Italy for over three generations, and we sell many of their offerings in our online store.
    The Chef's flour is a general purpose, high gluten flour that works well for many recipes. You can use it for pizza crust, pasta making, bread, and pastries.

    " refers to how refined the flour is, and indicates that it is refined further than regular flour, and that results in using less of the outer parts of the wheat, while also creating a very finely ground product.

    . It is not repacked. Each bag contains 5 Kilos (11 lbs) of flour.
    The product is GMO-free. According to the importer, "The flour cannot be labeled organic because it is not certified by a third-party agency." It does meet whatever strict EU standards exist for wheat flour.
    This is a special discounted price because the flour is a little short-dated and we want to move it out for your summer pizza making. It's been stored in a cold warehouse for the past seven months, but because pizza parties haven't been happening due to the pandemic, we didn't move as much as we normally do.  The Best By Date is Aug 29, 2021, and since it's been kept cold, and as long as you store it properly, it will be great past that August date.  It does not "Expire" on that date. The date on the bag is just the date that the manufacturer feels you will get the best results with. Flour can be used well past the best by date.
